Whilst travelling through Japan, Darren identified the personalised guest experience and the connection to local produce that he feels we should have more of in Sydney.

Cocktails, Sake and wines curated by Aurelien Having worked with Darren over the many years and coming from Obar, Aurelien has years of experience curating cocktails using native spirits and more.

Our Head Chef Lady has been cooking up a storm Izy Aki since the beginning, moving up to Head chef and has proven to be our MVP, Bonnie is the fibre that holds the Izy fabric together.

Bonnie arrived in Sydney armed with a passion for food and hospitality.

Darren

Darren Templeman is the head chef and helms the front counter here at Izy.Aki. He greets, presents the course and sources all of our "best of the best" produce.

Aurelien

Our resident sommelier, cocktail expert and host. Aurelien has years of experience curating cocktails and pairing them with the dishes from the Kitchen team.
His experience includes his time with Darren at  O bar.

Daseul (Bonnie)

A passionate member of our kitchen, Bonnie completed seven years of culinary training in Korea before moving to Australia. Now working alongside Darren, she helps craft our unique take on Japanese cuisine, adding subtle touches of her Korean culinary background.
